The other day I was on a mission to make Jamaican Jerk Chicken wraps with a mango salsa for my roommates. The store made mango salsa I usually purchase for this was out of stock, so I had to improvise. Using various recipes I found online, I adapted these to create my own delicious concoction for the wraps. Find below my version of a mango salsa, and feel free to adapt to be your own! Please note, the measurements are approximate, so you may need adjust accordingly.
Tropical Mango Salsa
Ingredients:
- 1 Jar of Sliced mango diced – juices reserved (or approximately 2-3 mangoes peeled and diced)
- Juice from 1 lemon
- 1/2 Red Onion diced
- 1/2 cup of cilantro leaves, finely chopped
- 1 medium sized tomato, diced
- 1/2 yellow pepper, diced
- Salt and Pepper
- Lemon Pepper
Combine all ingredients (juice from mango should be enough; however, feel free to add some of the reserved juice from the mangoes if need be for consistency). I used about 1 tsp of lemon pepper to add a little flavor and topped with salt and pepper to taste.

We used the salsa in wraps along with shredded Crockpot Pineapple Chicken, homemade guacamole, and black beans on top of a tortilla.
